The heat from peppers comes from their concentration of a natural compound called capsaicin. Capsaicin concentration is measured on the "Scoville Heat Scale," named after the work of an American pharmacist (Wilbur Scoville) in 1915. Different varieties of peppers measure higher or lower on the 100 to 2M Scoville Scale.
For our Scoville Heat Scale Dried Chili Sampler, we collected nine different pepper varieties that range from mild to nearly unbearable. Each variety is listed and described on the side card. Play around with them. Add different kinds to different stews, chilis, our Mortgage Lifter Sauce...and even desserts! Some peppers are whole, some are ground, but all are freshly packaged in small batches, just for Beekman 1802, by our expert spice artisan.
