Beekman 1802 Blaak is a seasonal cheese and is available in limited quantities from July-January. Beekman 1802 Blaak is the world-famous artisanal cheese produced from the goats at Beekman Farm. Blaak is an Italian-style semi-hard cheese made from a 60:40 mix of goat and cow milk giving the cheese a mild but distinctive flavor. In keeping with traditional cheesemaking practices, this rare cheese is aged for 3 months in our caves and is coated with ash at each turning to promote the ripening of the wheel. The resulting edible black rind gives the cheese its name and makes it a true conversation piece on your table.
We will be shipping wheels ordered on a first come first serve basis, additional wheels will go out the following week. Because each artisanal wheel is hand-crafted, there is a natural variation in size, shape and ash rind color. (Don't worry - its all delicious!)

Please note that your cheese order will ship separately from other items ordered and in a specially-designed box to ensure its safe arrival. All cheese shipments are sent out on Mondays (East Coast) and on Saturdays (Mountain and Pacific).
We will be shipping the first 250 wheels ordered on a first come first serve basis, additional wheels will go out the following week.
